Persian Feta is a silky smooth feta cheese with a luxuriously creamy texture and gentle sharpness. Made from local grass-fed cow’s milk and live cultures, the curds are gently set, then pressed to drain off excess whey, leaving behind a dense, unctuous feta cheese. Then we mature the blocks of feta in brine, before transferring them to the oil, which helps preserve the cheese and allows it to continue developing in flavour. Perfect spooned over salads, or as we like to do, spread on crusty bread with roasted peppers and a few drops of vincotto. Persian Feta adds a decadent, savoury touch to your cooking. We also produce this style of feta from buffalo milk.
